For the dough
2 1/2 cups of all-purpose flour (300 g)
1 tablespoon of active dry yeast
1/3 cup of olive oil (80 ml)
2/3 cup of water (160 ml)
For the topping
3 medium tomatoes (360 g), cut into slices
3 cups of grated cheddar cheese (300 g)
1 pinch of salt
1 tablespoon of dried oregano
2 tablespoons of olive oil

Preheat the oven to 400°F (hot)
Grease a pizza pan with olive oil, about 35 cm in diameter. Reserve
Prepare the dough: In a processor, mix all ingredients until smooth and even
Shape the dough into a ball, transfer it to a floured surface, and roll it out to fit the pan
Place the dough in the pan and prick it with a fork in several places
Put it in the preheated oven, reduce the temperature to 180°F (medium) and bake for about 20 minutes until the crust is firm
Prepare the topping: Remove the pizza from the oven and top it with tomato slices and grated cheese
Season with salt and oregano, and drizzle with olive oil
Put it back in the oven to melt the cheese (about 3 minutes)
Remove and serve
