1/2 cup cooked spinach
Salt, nutmeg, and black pepper to taste

Divide the dough into four parts
Roll out each part with a rolling pin until it's the size of the bottom of a skillet
Bake the disks in a medium oven for 10 minutes, being careful not to overcook them and lose their pliability
Remove from the oven and reserve
Place one disk of pre-baked dough into an anti-adhesion skillet greased with butter and spread the remaining ingredients on half of the dough
Close the dough like an omelette and fry both sides until the cheeses are melted and the dough is crispy.
