FOR THE TOPPING
1/2 cup of olive oil (120 ml)
8 medium-sized tomatoes, peeled and seeded, diced (1 kg)
3 cloves of garlic, minced
2 tablespoons of fresh basil leaves, chopped, or 4 tablespoons of dried basil
2 tablespoons of fresh oregano leaves, chopped, or 4 tablespoons of dried oregano
Salt and black pepper to taste

Bake the basic pizza dough (see page 42)
Brush both disks of dough with a little olive oil
Cover each one with half of the tomatoes, leaving a 1.5 cm border
Dust with garlic, basil, oregano, and season with salt and black pepper
Drizzle with remaining olive oil
Bake in a hot oven (250°C), preheated, for 20 minutes, until the crust is golden brown
