1 rabbit, cleaned (1.5 kg)
1 medium onion, finely chopped
4 cloves of garlic, minced
1/3 cup of olive oil
1 can of crushed tomatoes (400 g)
1 tablespoon of parsley, finely chopped
1 jalapeño pepper, mashed (optional)
Salt to taste

Place the rabbit in a bowl, cover with water and cook in the microwave on high for 16 minutes until tender
Drain and cut into small pieces
In another container, combine the onion, garlic, and olive oil
Microwave for 3 minutes
Add the crushed tomatoes and blend well with the back of a spoon
Add the parsley and season with salt and jalapeño pepper
Return to the microwave for an additional 5 minutes
Combine the rabbit, mix well, and serve.
