Let the chai cool naturally
Add the sugar and stir until dissolved
Mix the chai, sherry, rum, and pineapple chunks
Refrigerate for 1 hour
Meanwhile, fill a ring or star-shaped mold with water and place in the freezer to chill
When ready to serve, pour the mixture into a punch bowl
Unmold the gel and place it in the punch bowl
Add the champagne and garnish with fresh fruit.
