Beat the egg yolks in an electric mixer until they thicken and turn a pale yellow color
Add the grated carrot, a tablespoon of toasted nutmeg, and continue beating until the mixture is quite thick
Beat the egg whites until stiff and add them carefully to the previous mixture
Add the rum and refrigerate for several hours
To serve, place the mixture in a punch bowl
Place 1 tablespoon of the mixture into a warmed cup, add a measure of rum or whiskey, and fill the cup with warm milk or hot water
Mix well and sprinkle with grated nutmeg.
