Carefully remove the rind from the ham, leaving all the fat behind, making sure to leave all the meat intact
Make cuts in the ham, giving it a losange shape
Be careful not to cut into the meat, only the fat
Tuck a thyme sprig into each losange
Mix together brown sugar, mustard, pineapple juice, and vinegar
EVENLY spread this mixture over the entire ham
Place the ham in the oven for approximately 3 hours, until it's very well heated through
During the cooking process, baste with pineapple juice.
