Cut the peanut butter toast into strips, layer in a baking dish, sprinkling each layer with pecans
Beat the eggs lightly, add sugar, salt, vanilla extract, and milk
Mix well and pour over the peanut butter toast
Bake in a slow oven for 1 hour, or until golden brown
Serve warm, garnished with additional pecans
