1 kg of squab

1/2 cup of milk
2 tablespoons of wheat flour
2 eggs, separated
3/4 cup of grated Parmesan cheese
1 pinch of nutmeg

Deskin the squab and remove the seeds
Cut it into cubes
Place the cut squab, butter, and 1/4 cup of milk in a refractory dish
Cover and cook on high heat for 15 minutes, stirring once
Remove from the microwave and let cool
Pass through a potato masher, combine the remaining milk, wheat flour, egg yolks, grated cheese, nutmeg, salt, and black pepper
Mix everything
Beat the egg whites until fluffy and fold them gently into the squab mixture
Place the mixture in a 24cm dish, greased with butter and dusted with breadcrumbs
Sprinkle 1/2 tablespoon of grated cheese on top, uncovered, microwave for 12 minutes on high heat
Serve hot
