Cook the spinach, drain well, and chop
Melt the butter or margarine, add the flour, let it cook slightly, and gradually stir in the milk until a smooth white sauce forms
Add the chopped onion, grated lemon rind, salt, and black pepper
Combine the beaten egg whites, cooked spinach, and white sauce in a bowl
Fold in the beaten egg yolks gently
Pour into a 21x21cm baking dish and bake in a moderate oven (170°C) for 1 hour
Serve warm.
