One-third cup of uncooked rice
1 1/2 cups of strong coffee
1 tablespoon of butter or margarine
2 well-beaten eggs
1 cup of milk
One-third cup of honey
One-third cup of sugar
Half teaspoon of vanilla extract
Cinnamon to taste

In a saucepan, combine the rice and coffee
Bring to a boil and cook for about 35 minutes or until the rice is tender
Add the butter or margarine and other ingredients and mix well
Pour into a greased 1-liter mold or baking dish
Sprinkle with cinnamon and place in a hot water bath
Bake at moderate temperature (170°C) in a water bath for about 50 minutes or until a knife inserted in the center comes out clean
Serve warm or cold with whipped cream, if desired
