Caramelize a baking dish, using 2/3 cup of the granulated sugar specified above
Beat the egg whites until stiff and add the remaining granulated sugar gradually, beating constantly
Place in the prepared baking dish and bake in a moderate oven, with water to about an inch deep, for 1 hour or more
Let it cool, release the sides and unmold
The sauce: warm the milk with the egg yolks slightly beaten and sweeten to taste
Cook, stirring constantly until it thickens slightly
Cool and let it refrigerate before serving
Flavor with vanilla
Refrigerate before serving.
