Gently beat the eggs with lime zest in a medium bowl
Add milk and sweetener along with vanilla extract
Mix well
Pour into 6 individual pudding molds, using approximately 1/2 cup for each
Place the molds in a shallow baking dish; put it in the oven; pour boiling water into the dish until it reaches a depth of 2 cm
Bake at moderate heat for 40 minutes or until puddings are almost firm to the touch
(They will set further as they cool.) Remove from the oven immediately
Serve warm or chilled
Serve in six portions.
