Preheat the oven to 180°C

Peel the mangoes, remove the seeds, and cut them into small cubes

Put them in a saucepan and dust with sugar

Add lime juice and cook on low heat until it becomes creamy
If necessary, add a little warm water to the spoonfuls

Remove from the heat and strain through a fine-mesh sieve
Add cinnamon and reserve

Beat the egg whites with salt until stiff and fold them gently into the mango pudding

Pour it into an ungreased mold, place in the oven to brown, and let it cool
Let the pudding cool down and unmold it
