    For the sauce: Mix sugar with water.

    Pour this sauce into the bottom and sides of a 22.5 cm x 10 cm x 6 cm English-style muffin tin.

    For the custard: In a medium pan, combine milk, lemon zest, and cinnamon.

    Bring to a boil.

    Let it rest for 15 minutes.

    Remove the lemon zest and cinnamon from the milk.

    Beat eggs and egg yolks with sugar.

    Mix in the still warm milk.

    Strain this mixture through a sieve.

    Pour into the prepared mold.

    Bake in a moderate oven (170°C) or until, when inserting a toothpick, it comes out clean.

    To un molds, pass a knife around the sides.
