Mix the flour with salt
Beat the eggs until they become pale yellow
Add the flour and salt mixture, and mix well
Gradually add the milk, beating for 2 minutes
Prepare the pudding in time to pour into a roast pan 30 minutes before it's ready
Place the roast on one side of the pan
Remove all excess fat, leaving only 4 tablespoons (sauce)
Pour the pudding mixture into the pan, allowing for 1 cm of height
Bake in a hot oven (400°F) for 30 minutes
Cut into squares and serve immediately
The pudding can also be baked separately in a well-greased refractory form
This pudding is served with the roast's gravy
