Cook the yams in water for about 1 hour
Remove from the pot, drain, and puree
In a small pan, sauté the onion in olive oil for 3 minutes
Add the shallots, vinegar, ginger, and salt; mix well
Remove from heat, add the pureed yams and mix well
Serve hot with croquettes.
