4 large sweet potatoes

Peel the large sweet potatoes and place them in a pot
To speed up cooking, cut them into uniform pieces
Cover with cold water and cook on low heat for 10-15 minutes or until they are tender

Drain and mash them with a potato masher to form a thick and homogeneous paste

Return the potatoes to the pot and add butter and salt
Mix with circular motions from the center outwards, and if you want a smoother purée, add milk or heavy cream
Serve immediately.
