Strain the peas well through a sieve or blender
Add the black pepper
In a saucepan, melt the butter, add the flour and cook until lightly browned
Add the pea puree and heavy cream and let simmer, stirring constantly
Season with salt and pepper, mix well and add the sour cream
Serve 6 to 8 servings.
