1 1/2 kg of spinach
2 1/2 ripe pears
salt and black pepper to taste
1 1/2 kg of spinach

Remove the stems from the spinach leaves
Cook the spinach in boiling salted water until tender, then drain and squeeze out excess water
Wash the pears well, remove seeds, and cut into quarters
In a blender or food processor, combine cooked spinach and pear quarters
Season to taste with salt and black pepper
Keep warm in a bain-marie (double boiler)
Cooking Tip: Do not prepare ahead of time as it will lose its green color
