1 kg of sweet potatoes
2 cups of water
2 cloves of garlic, peeled and sliced
1/2 cup of butter
1/2 teaspoon of salt

Scrape the sweet potatoes and cut into chunks
Place in a pot with water and bring to a boil
Simmer until they're tender and the water has evaporated
Fry the garlic in a small pan with butter until it starts to brown
Add the sweet potatoes to a blender along with the garlic and blend until smooth
Heat the puree over low heat, season with salt and simmer well, stirring constantly
