For the dough:
1 1/2 cups all-purpose flour
2 tablespoons olive oil
1 tablespoon active dry yeast
1/2 cup lukewarm water and 1 teaspoon salt
For the topping:
1 cup mayonnaise mixed with 3 egg yolks and 2 tablespoons chopped anchovies
3 egg whites beaten until stiff
For the dough:

Place all-purpose flour in a bowl, make an indentation in the center, and add the remaining ingredients
Mix well
Gently knead and place in a 20 x 30 cm baking dish, pressing down with your hands
Bake at moderate heat (180°C) for about 20 minutes, then remove from the oven and top with the following mixture: 1 cup mayonnaise mixed with 3 egg yolks and 2 tablespoons chopped anchovies
Add this mixture to 3 egg whites beaten until stiff
Mix delicately
Spread over the baked dough and bake for an additional 15 minutes, or until golden brown all over.
