1 1/4 cups of butter or margarine
1/2 cup of chocolate chips
3 1/2 cups of confectioners' sugar
1 egg, beaten
1 teaspoon of vanilla extract
200g of biscotti crumbs (1 package)
1/3 cup of peppermint extract
1 1/2 cups of semi-sweet chocolate chunks
1 1/4 cups of butter or margarine
1/2 cup of chocolate chips
3 1/2 cups of confectioners' sugar
1 egg, beaten
1 teaspoon of vanilla extract
200g of biscotti crumbs (1 package)
1/3 cup of peppermint extract
1 1/2 cups of semi-sweet chocolate chunks
For the first layer: in a saucepan, mix together 1/2 cup of butter or margarine and 1/2 cup of chocolate chips
Heat until well combined
Remove from heat and add 1/2 cup of confectioners' sugar, 1 egg, and 1 teaspoon of vanilla extract
Stir well
Add the biscotti crumbs
Mix well and press into the bottom of a 30x20cm ungreased baking dish
Place in the freezer while preparing the next layer
For the middle layer: melt an additional 1/2 cup of butter or margarine
In a small bowl, mix together the melted butter, peppermint extract, and remaining confectioners' sugar
Beat well
Spread over the first layer
Place in the freezer while preparing the final layer
For the final layer: in a saucepan, melt 1/4 cup of remaining butter with chocolate chunks
Melt over low heat until smooth
Spread over the mint layer
Place in the refrigerator
Cut into squares
Store in the refrigerator
Yield: approximately 63 squares, each about 3.3x2.8cm.
