50 g of active dry yeast, crumbled
2 cups of warm milk
5 cups of all-purpose flour
2 tablespoons of butter
1 tablespoon of melted butter
3 large eggs
2 cups of grated cheddar cheese
1 teaspoon of salt
1 egg yolk
3/4 cup of curdled cheese, grated

Crumb the yeast in the milk
Add 2 cups of flour, mix well, and let it rest for 30 minutes, covered with a cloth
Melt the butter and blend with the yeast mixture
Let it cool and join the yeast mixture with the eggs, grated cheddar cheese, salt, and remaining flour
Mix well with a wooden spoon
Place in a 25 cm diameter cake pan, greased with melted butter
Remove a small amount of dough to test if it is ready to bake
Let the dough rest until it rises to the top of the pan
Brush with an egg yolk and sprinkle with grated curdled cheese
Bake in a moderate oven (180°C), preheated, for 1 hour or until golden brown
(Insert a toothpick into the center; it should come out clean)
Slice into 20 pieces.
