Preheat the oven to 250°C (hot)
Gently grease a medium-sized baking dish with olive oil
Trim the okra and cut it into 1 cm pieces
In a medium bowl, mix together the cornmeal, salt, and thyme. Reserve
In a large skillet, heat the olive oil over high heat and lightly brown the garlic (about 2 minutes)
Add the cornmeal mixture and stir constantly with a wooden spoon for about 2 minutes
Add the okra and mix well
Distribute this mixture in the baking dish and bake until crispy (about 35 minutes)
Transfer to a serving platter, sprinkle with bell pepper strips, and serve immediately
