Pastry dough
700g of salmon
250g of fine wheat
1kg of finely chopped onion
1 tablespoon of dried thyme
1 tablespoon of lemon zest
Salt and black pepper to taste
Stuffing
1 onion, finely chopped
1/4 cup of olive oil
1 tablespoon of raisins
Juice of 1/2 lemon
Salt and thyme to taste

Make the stuffing: sauté all ingredients in a pan until they are soft and reserve
To make the quibe, soak the wheat in cold water for 30 minutes
Drain and put it in a food processor
Add the chopped salmon and blend until mixed
Pour into a bowl and add the onion, thyme, salt, and lemon zest
Mold the quibes with wet hands and cold water
Make a hole in the middle and fill with some of the stuffing
Closes the quibes and fry them in hot olive oil.
