Marinate the dried beef in vinegar overnight, changing the water several times
The next day, drain and cut the meat into cubes
Transfer the meat to a pressure cooker and add the olive oil and garlic
Let it simmer until there's no more liquid, season with black pepper and sauté until cooked through
Scrape the bottom of the pressure cooker, adding water gradually
Add the tripe and remaining water
Seal and cook for 30 minutes from boiling point
