8 tilapia fillets (1.5 kg)
1 tablespoon of salt
2 tablespoons of lime juice
2 tablespoons of olive oil
4 cloves of garlic, minced
4 medium tomatoes (400 g), cut into slices
5 medium onions (500 g), cut into slices
4 tablespoons of chopped cilantro
2 tablespoons of chopped green onions
1/4 cup of heated olive oil (60 ml) with 1 tablespoon of coloring
1/2 cup of water (120 ml)

In a medium bowl, season the tilapia with salt and lime juice
Set aside
Next, in a large pan, heat the olive oil over high heat, add the garlic and cook until softened (3 minutes)
Add half of the tomato and onion mixture and stir constantly until it becomes soft (3 minutes)
Add the fish, remaining tomato, and other ingredients
Simmer at medium heat
Cover and cook for about 15 minutes, or until a fork can easily pierce the fish
Transfer to a serving dish and serve immediately
