For the crust
2 cups all-purpose flour (240 g)

2/3 cup cold unsalted butter, cut into small pieces (150 g)

250 grams medium-sized shrimp, cleaned and drained
1 medium onion (100 g), finely chopped

1 teaspoon salt
2 eggs, lightly beaten

Make the crust: In a large bowl, combine the flour, salt, and cold butter
Use your fingers to work the dough until it forms a crumbly mixture
Add the water and mix just until the dough comes together in a ball
Wrap it in plastic wrap and refrigerate for about 15 minutes
Bake the crust: Preheat the oven to 180°C (medium)
Roll out the dough on a floured surface to a thickness of about 1/8 inch
Place it into a 9-inch tart pan with a removable bottom
Shape the crust: Use your fingers or a fork to press the edges of the crust up along the sides of the pan, making sure they are even and not too thin
Make the filling: In a medium saucepan, combine the water, shrimp, onion, garlic, butter, flour, milk, lime juice, salt, eggs, and cilantro
Bring to a simmer over medium heat and cook until the shrimp is pink and just cooked through
Fill the crust: Pour the filling mixture into the baked crust and smooth out the top with a spatula or spoon
Bake again: Bake the quiche at 180°C for about 25 minutes, or until the filling is set and the crust is golden brown
Serve: Remove from the oven and let cool slightly
Serve warm, garnished with fresh cilantro if desired.
