In a saucepan, melt the butter or margarine
Add the confectioner's sugar, shredded coconut, orange juice, and 1/2 teaspoon grated orange zest
Cook over medium heat, stirring until golden brown (about 3-4 minutes)
Beat the heavy cream with confectioner's sugar until it forms stiff peaks
Add the remaining grated orange zest and mix well
Use to fill pancakes with coconut mixture and top with whipped cream
Filling for 8 pancakes.
