2 cups of finely chopped orange zest
1 cup of boiling water
1/4 cup of grated onion
1/2 cup of butter, margarine, or oil
8 cups of stale breadcrumbs, cut into small pieces or cubed
salt and pepper to taste

1 tablespoon of grated orange peel

Cook the salt in boiling water, covered, over low heat, for 15-20 minutes or until soft
Cook the onion in butter or margarine until soft but not browned
Season the breadcrumbs with salt and pepper, add the cooked salt, butter, onion, orange, and grated peel
If too dry, add a little orange juice
This filling is suitable for game birds such as turkey, duck, or chicken of approximately 2.5 kg
Stuff the bird and cook as usual
