1 cup of finely chopped onion
1 cup of crumbled sausage
1/2 cup of butter
4 1/2 cups of fresh parsley crumbs
1/2 teaspoon of grated lemon zest
2 tablespoons of lemon juice
1/4 cup of chopped fresh thyme
2 lightly beaten eggs
Salt and black pepper to taste

Cook the onion with the sausage and butter over medium heat
Cover and cook on low heat for 20 minutes
Remove from heat and combine the remaining ingredients
Mix well and season with salt and black pepper
Stuff into one turkey breast of approximately 4 kg
