In a 26cm diameter microwave-safe bowl, mix together the olive oil, onion, and garlic
Microwave on high for 3 minutes or until the onion is soft, stirring halfway through
Add the spinach, mix well, and microwave on high for 1 minute
Make four depressions in the spinach with a spoon and crack an egg into each one
Use a fork to make holes in the whites
Sprinkle the spinach and eggs with salt and Parmesan cheese
Microwave on high for 3 minutes or until the whites are lightly set and the yolks are creamy
Remove from microwave, place toasted bread slices around the edges of the bowl, and serve immediately
