3 1/2 cups of fresh corn kernels
1 cup of chopped cabbage
1 green pepper, diced
1 red pepper, diced
1/2 cup of grated ginger
1/2 cup of water
2 cups of white wine vinegar
1/2 teaspoon of mustard powder
1/2 teaspoon of black peppercorns
1/2 teaspoon of Jamaican pepper
1 tablespoon of salt

Mix all the ingredients and bring to a boil
Let it simmer for 30 minutes, stirring frequently to prevent scorching at the bottom of the pot
Place in sterilized hot jars
Close but don't seal
Place in a pan with hot water and let simmer for 20 minutes
Close tightly
End up with about 3 half-liter jars
