1 red cabbage of about 750g
8 slices of bacon, cut into small pieces and pickled
3 tablespoons of wine vinegar
1 cup of water
2 tablespoons of raisins
1 tablespoon of caraway seeds (kummel)
1/2 cup of dry white wine
1 tablespoon of allspice
salt and black pepper to taste

Remove the outer leaves from the red cabbage and chop it finely
Place it in a large bowl, add boiling water enough to cover, and let it sit for about 10 minutes
Drain well and put it in a pot
Add the bacon, vinegar, water, raisins, and caraway seeds
Let it simmer and cook slowly with the lid on, stirring occasionally, for about 40 minutes
Add the wine and allspice and cook with the lid on for another 30 minutes or until tender
Season to taste with salt and black pepper
