Mix together the sweet potato, yogurt, and horseradish
Season and set aside
Prepare the mayonnaise: in a blender, combine the egg and salt
Blend until thickened, slowly adding the olive oil while blending
Add the mayonnaise to the sweet potatoes and mix well
When serving, line a salad bowl with arugula and place the sweet potatoes in the center
Chill for at least 24 hours.
