1 1/2 cups of chicken broth
1 large onion, finely chopped
2/3 cup of rice
3 medium zucchinis, cut into slices
2 tablespoons of olive oil
1 minced garlic clove
1/4 teaspoon of cinnamon
180g of calabresa sausage, finely chopped
400g of tomatoes, peeled and seeded, cut into pieces
Salt to taste

In a ceramic bowl, combine 1 cup of chicken broth, the onion, rice, zucchini, olive oil, garlic, and cinnamon
Cover and microwave on high for 8 minutes
Remove from oven and mix well
Add the sausage and tomatoes, cover again, and cook in the same pot at medium-high heat for an additional 20 minutes or until the rice is tender and the liquid has been absorbed
Season with salt and add more broth if needed
Serve immediately.
