Boil the potatoes, peel and mash them
Make a dough by combining the flour and 1 egg
Season with salt
Roll out the dough on a floured napkin
Cook the spinach without water, chop finely, then sauté in butter or margarine, remove from heat and mix in grated Parmesan cheese and the remaining 2 eggs, well beaten
Mix well and spread over the mashed potatoes
Roll up like a roll and tie the napkin
Boil in salted water for 20 minutes
