2 eggs

Beat the eggs slightly with salt and black pepper
Add a few drops of water and some olive oil
Mix well
Pour into a large frying pan and fry one side, controlling the heat so it doesn't burn
Season the crab meat with vinegar, olive oil, salt, and black pepper, then sauté in olive oil with onion and tomato
Spread the filling over the un-fried side of the omelet
Dust with chives
Roll up like a rocambole, pressing tightly
Serve hot or wrap in cling film and refrigerate for 1 hour
To serve, cut into slices and place on lettuce leaves
Serve 2-3 portions.
