4 chicken breasts
Salt and black pepper to taste
4 slices of prosciutto
1 cup grated cheddar cheese, finely ground
3/4 cup breadcrumbs
2 eggs beaten lightly
1/3 cup butter
1 tablespoon olive oil
1/4 cup grated cheddar cheese, coarsely ground
4 chicken breasts

Pound each breast to an even thickness and season with salt and pepper
Cut the prosciutto slices in half and place two halves on top of each breast
Sprinkle 3 tablespoons of grated cheddar cheese, finely ground
Carefully roll up the breasts and secure each roll with a toothpick
Mix the remaining grated cheddar cheese, finely ground, with breadcrumbs
Dip each roll in the beaten eggs and then in the breadcrumb mixture. Reserve
Preheat the oven to 220°C
Melt the butter in a skillet and add olive oil
Brown the rolls and reduce heat
Let them cook for an additional 15 minutes
Drain the rolls, remove toothpicks, and sprinkle with a little grated cheddar cheese, coarsely ground
Serve immediately.
