Cut the papaya into thin strips, lengthwise
Wash them, drain, and wrap in a clean cloth, leaving to rest for 3 hours to help soften and be rolled up
Roll each strip, forming a roll, securing with a toothpick, so that both ends are fixed not to unravel during cooking
In a large pot, place the water, sugar, cloves, and canela sticks
Arrange the rolls in a single layer and bring to a low boil
Let it cook until the liquid reaches a syrupy consistency
Let it cool, remove the toothpick, and refrigerate in a glass container with a lid, covered with the syrup.
