16 thin slices of cooked ham (300g)
1/2 kg of fresh or canned mushrooms, cleaned and finely chopped
1/3 cup of green onion chives, finely chopped
3 tablespoons of butter or margarine
200g of fresh ricotta cheese or Minas cheese, passed through a sieve
2 tablespoons of mustard
salt and black pepper to taste
2 tablespoons of chopped parsley
16 thin slices of cooked ham (300g)

In a skillet, sauté the green onion chives in butter or margarine until softened
Add the mushrooms and cook, stirring, until the liquid evaporates
Remove from heat and add all ingredients except ham, mixing well
Spread about 2 tablespoons of this filling over each slice of ham
Dust with a little chopped parsley and roll up
Cover and refrigerate for 1 hour or more
When serving, cut each roll into 4 pieces and arrange on a platter
If desired, skewer with colorful toothpicks
Yield: 16 rolls or 64 pieces.
