3 medium-sized Italian zucchinis

1 Cut the zucchinis lengthwise into slices 0.5 cm thick. Reserve
2 Heat a grill to medium heat
Brush the slices with half of the olive oil and grill for three minutes on each side or until tender
Reserve for five minutes
3 Preheat the oven to medium temperature
Cut the tomato and Provolone cheese from Baia into strips
Place two tomato strips and three slices of Provolone cheese on top of a grilled zucchini slice
4 Season with salt, black pepper, oregano, and the remaining olive oil
Roll up along the length and skewer with a toothpick
5 Arrange the rolls on a baking dish and bake in the oven for eight minutes or until heated through
Serve immediately.
