Slice the zucchini lengthwise into 0.5cm thick rounds, then reserve

Heat a grill pan over medium heat
Brush the zucchini slices with half of the olive oil and grill for 3 minutes on each side or until tender, then reserve for 5 minutes

Preheat the oven to medium temperature
Slice the tomato and provolone cheese into thick rounds
Place two tomato slices and three provolone cheese slices on top of a grilled zucchini round

Season with salt, black pepper, oregano, and the remaining olive oil
Roll up the filling by length and secure with a toothpick

Arrange the rolls on the preheated baking sheet and bake for 8 minutes or until heated through
Serve immediately.
