In a baking dish, place cold water and soak one sheet of rice paper
Let it rest until softened
Remove from the water and place on a clean towel
Assemble the fillings and roll like a pancake
Hydration is key – do this one by one
Place the rolls in a dish and cover with a clean towel
Reserve for later
Sauce
Mix all ingredients together and serve with the rice paper roll
