Cut the coconut into four parts with a saw
Remove the shell and pass the coconut through a food processor to cut thin, wide strips (about 1 inch high). Reserve
Combine the sugar and water in a saucepan, stirring until the sugar dissolves, then bring to a boil until it thickens slightly (test by letting a small amount of syrup drizzle from the spoon; it's ready when a thick thread forms)
Add the coconut strips and let simmer for an additional 10 minutes
Perform the test: remove one strip from the saucepan and let it cool
If it sticks lightly to your fingers, it's done
The strips should not be dry, but tender
Arrange 5 strips at a time (still warm) to form a rose shape
Let them dry before serving on a sweet plate
Yield: 50 units.
