Season the lizard with 1 tablespoon of herb blend and to taste salt
Preheat the oven to hot temperature (400°F)
Melt the butter or margarine in a large skillet and cook the meat on all sides
Place a baking dish, with 2 inches of water and the remaining herb blend, at the bottom of the oven
Place the meat on a rack in the oven and roast for approximately 1 hour or more, if desired, adding more water to the baking dish as needed
Serves 6-8 people.
