Ingredients
1 kg of mignon beef (center cut)
1 xylar of olive oil
White pepper and salt to taste
2 large onions, chopped
150 g of sun-dried tomato
1 1/4 xylars of dry red wine
1/2 spoonful of thyme
1/2 spoonful of rosemary
1/2 spoonful of oregano

Tie the beef with ribbon to keep fibers together
In a bowl, mix 1/4 xylar of olive oil, white pepper, and salt
Brush the beef with this mixture

Heat the oven at high temperature
In a pan, heat the remaining olive oil and place the beef
Brown it on all sides
Remove from the pan and transfer to an oiled baking dish
Roast for 15 minutes
Turn off the oven and leave the beef inside to stay warm

In the same pan used to brown the beef, sauté the onion until slightly softened over 5 minutes
If needed, add more olive oil
Add sun-dried tomato and stir
Add dry red wine and herbs
Let it simmer for another 15 minutes
Slice the beef and serve with the sauce.
