1 bunch of spinach
2 ripe tomatoes

2 cucumbers
2 tablespoons olive oil
1 tablespoon lemon juice
Salt and black pepper to taste

Chop the spinach into strips and place in a bowl
Cut the tomatoes in half and remove the seeds
Cut them into cubes and combine with the onion
Peel the cucumbers and blanch them in salted water until they are tender but still firm
Cut the cucumbers into small cubes and add to the bowl
Mix the olive oil with lemon juice, salt, and black pepper, and drizzle over the salad
Serve immediately
