Mustard
1 cup of extra virgin olive oil
1/3 cup of apple cider vinegar
1/4 cup of honey
1/3 cup of Dijon mustard
1 tablespoon of salt
Salad
1/2 cup of crumbled gorgonzola cheese
4 tablespoons of freshly squeezed lime juice
3 ripe pears with skin, cut into thin slices
1 large handfull of arugula

Dressing
In a small bowl, whisk together the apple cider vinegar, Dijon mustard, honey, and salt
Gradually add the olive oil while continuously whisking with a fork or a wooden spoon until you reach a thick and smooth dressing
Refrigerate for 20 minutes
Salad
In individual plates, arrange the arugula, followed by slices of pear, crumbled gorgonzola cheese, and drizzle with the honey mustard dressing
Lightly whisk the dressing again and serve with the salad.
